Iftar 16 Ramadhan 1437H | 21.06.16

AsSalam...

Allahu akbar. Sangatlah cepat masa berlalu..kian menghampiri hari nuzul Quran kan..itu lah seadanya. Akhir2 zaman ni, kita akan merasakan masa sgt cpt meninggalkan kita hmm...


Menu utk AlmaRaz, spt biasa list asal spt kat bawah. Yg cantas means menu asal kat dlm jadual di-cancel ler ye hehe..

Iftar 14 Ramadhan 1437H | 19.06.16

Hari ni kena tukar byk menu sbb masih ada yg tak puas makan tomyam 2 hari lepas. Kesian lak so today mom buat tomyam lagi yerrr...combination-nya pasti depa nak paprik gak but still nak ayam..alaahai...Layannnnn....janji nak puasa :)

Menu hari ke-14 untuk AlmaRaz's family:

Salam Jumaat yang penuh barokahNya...

Semakin hari macam semakin kurang dan nk post2 ni hihihi.
Anyway, today kami tukar menu.

Ada yg tetiba nk tomyam, ada yg tetiba nk rendang kerang (mom le tuuu heheh). Apa2 pun, here it is our iftar menu for 12th Ramadhan:

Nasi putih
Chicken masala
Tomyam ayam (using my homemade tomyam paste)
Seafood paprik
Rendang kerang (tetiba mom nak makan hat ni..mcm berzaman dah tak buat!)
Kangkung tumis belacan
Telur dadar
Rebus pucuk ubi + sambal

Ni pulak my tomyam paste...mcm biasa, buat sebotol, senang & cepat..sbb nak masak nnt berulang2.

Iftar 9 Ramadhan 1437H | 14.06.16

Hari yang sangat hectic for mom!
Meeting abes lambat la pulak. So smpai rumah around 6.40pm gitu
Apa lagiii....silat-menyilat ler kat dapoq!
Alhamdulillah ada assistant2 setia, my 2 daughters!

Our menu for 9th Ramadhan,Tuesday:
Nasi putih
Kari ikan tenggiri + bendi + aubergine (Indian style, resipi ada di bawah ye!)
Opor sotong > mom gantikan dgn stirfry squid as per requested by kids
Ulam & sambal > mom gantikan dgn strify bean sprout+chives
- popia goreng & pencicah

Ikan masak kari

Ingredients :~
4 blocks of Threadfin (Senangin) >  mom tukarkn kpd ikan tenggiri
1/2 tsp mixed spice seeds (mustard seeds, cumin seeds & fenugreek seeds)
4 garlic cloves ~ chopped
1/2 inch ginger ~ chopped
1 onion ~ sliced
2 green chillis ~ sliced
1 stalk lemongrass ~ slightly bruised (optional)
1 sprig curry leaves
4 ladies' fingers ~ chop off both edges
3 cups of water
2 tbsps fish curry powder
1 tbsp chilli powder
1 tsp turmeric powder
1 large tomato ~ cubed
2/3 tsp tamarind paste
1/2 cup coconut milk (optional) > mom omit this one
Aurbugine - cut into 4 > mom add this one
Oil
Method :~
Heat oil in wok. Saute mixed spice seeds. Add onion, green chillis, lemongrass and curry leaves. Stir until fragrant and add garlic & ginger. Stir for 2 minutes.
Add water, tamarind paste, fish curry powder, chilli powder, turmeric powder and salt. Mix well and let it boil for 5 minutes.
Add coconut milk (if you're adding) and ladies' fingers. Let it boil again for 3 minutes.
Add tomatoes and add fish blocks. Cover the wok and cook under medium heat for another 5 minutes or until fish is cooked.
Stir gently once awhile. Check for salt and dish out.

Iftar 7 Ramadhan 1437H | 12.06.16

Hari ke 7 yg penuh cabaran.
Balik dari shopping raya dh kelewatan, kurang prepare awal2 tu le sbbnya lmbat segala heheh....
Sudahnya, menu2 asai terpaksa di cantasssss :(

Our 7th iftar menu list:
Nasi putih
Yoghurt beef/mutton masala > ditukar kpd ayam
Sup ayam Hatyai > dah diganti pada hari sebelumnya
Chicken Masala
Daging masak kicap > hat yg switched dgn ayam hatyai pada hari sebelumnya
Tumis kacang buncis
Celur pucuk betik & ulam daun pokok gajus + Sambal

-Kuih bakar jagung & sago caramel
- Kuih kundas > ni je yg paling cepat boleh siap in less than 10mins!

chicken masala - using homemade masala spice

Chicken Masala

Ingredients:~
(A) Marinade
Half chicken - cut into medium size (I've used chicken breast with liver and gizzard)
1 tbsp ginger-garlic paste
1.5 tbsp chilli powder > just add a little..tu pun dah pedas sampai ada yg kene tukar nasi but said still yummmm!
2 tbsp meat curry powder
1 tsp turmeric powder
Salt
2 tbsp lime juice

(B) Mixed spices
1 cinnamon stick
3 cardamoms - slit open and save the seeds
1 star anise
2 cloves
Coriander seeds
Fennel seeds
Cumin seeds
Black peppercorn
*add your preferred spices > mom just add all the above

(C)
2 large onion - sliced
2 bay leaves
1 sprig curry leaves
2 green chilies - sliced
1 red chilli - sliced
1 tomato - sliced
Sufficient water
2 handsful coriander leaves - chopped
1 tbsp lime juice
3 tbsp ghee

Method :~
Marinade ingredients (A) for an hour.

Marinated in a large plastic bag

Dry roast spices (B) without oil and grind smooth. Set aside. We will use 1.5 tbsp of this.
Heat ghee in a wok. Stir fry onion, bay leaves, curry leaves and green chillies (I add together the red chillies) until fragrant. Add tomatoes and stir.
Now add in marinated chicken pieces. Mix well and cook with lid covered for 10 - 15 minutes. Check once awhile and stir.
Add little water and salt if needed. Add 1.5 tbsp of roasted & ground mixed spices. Mix thoroughly and add coriander leaves.
Lastly, pour 1 tbsp lime juice and mix evenly. Dish out and ready to be served.
