Iftar 7 Ramadhan 1437H | 12.06.16


AsSalam...

Hari ke 7 yg penuh cabaran.
Balik dari shopping raya dh kelewatan, kurang prepare awal2 tu le sbbnya lmbat segala heheh....
Sudahnya, menu2 asai terpaksa di cantasssss :(

Our 7th iftar menu list:
Nasi putih
Yoghurt beef/mutton masala > ditukar kpd ayam
Sup ayam Hatyai > dah diganti pada hari sebelumnya
Chicken Masala
Daging masak kicap > hat yg switched dgn ayam hatyai pada hari sebelumnya
Tumis kacang buncis
Celur pucuk betik & ulam daun pokok gajus + Sambal

-Kuih bakar jagung & sago caramel
- Kuih kundas > ni je yg paling cepat boleh siap in less than 10mins!

chicken masala - using homemade masala spice

Chicken Masala

Ingredients:~
(A) Marinade
Half chicken - cut into medium size (I've used chicken breast with liver and gizzard)
1 tbsp ginger-garlic paste
1.5 tbsp chilli powder > just add a little..tu pun dah pedas sampai ada yg kene tukar nasi but said still yummmm!
2 tbsp meat curry powder
1 tsp turmeric powder
Salt
2 tbsp lime juice

(B) Mixed spices
1 cinnamon stick
3 cardamoms - slit open and save the seeds
1 star anise
2 cloves
Coriander seeds
Fennel seeds
Cumin seeds
Black peppercorn
*add your preferred spices > mom just add all the above

(C)
2 large onion - sliced
2 bay leaves
1 sprig curry leaves
2 green chilies - sliced
1 red chilli - sliced
1 tomato - sliced
Sufficient water
2 handsful coriander leaves - chopped
1 tbsp lime juice
3 tbsp ghee

Method :~
Marinade ingredients (A) for an hour.

Marinated in a large plastic bag

Dry roast spices (B) without oil and grind smooth. Set aside. We will use 1.5 tbsp of this.
Heat ghee in a wok. Stir fry onion, bay leaves, curry leaves and green chillies (I add together the red chillies) until fragrant. Add tomatoes and stir.
Now add in marinated chicken pieces. Mix well and cook with lid covered for 10 - 15 minutes. Check once awhile and stir.
Add little water and salt if needed. Add 1.5 tbsp of roasted & ground mixed spices. Mix thoroughly and add coriander leaves.
Lastly, pour 1 tbsp lime juice and mix evenly. Dish out and ready to be served.
