Very simple dish for brekky & lunboxes kitarang. Sausage rolls - boleh klik this link utk dapatkan resipi dough-nya : ROLLS. Karipap - menu harian yg lom lg jemu2 nih hheeh..Mommy perasan yg mommy tak pernah share pun camana nk buat karipap & inti karipap versi mommy...Well, insyaAllah, one fine day nnt akan di-share jugak. Goong Kratiam


This is another Thai affair :D.
Goong maksudnya shrimps atau udang, Kratiam means bawang putih so jadinye Udang Masak Bawang Putih...pelik la bunyinye dlm bhs kita yer...mmm...Biasanya org Thai masak guna udang besar cam banana prawn tu ke tp stok dlm esbok tu cuma ada udang kecik2, jalan ajer lerr.
Masakan simple Thailand ni boleh tukar udang kpd sotong, mussel & etc...this is my own cooking style so bila guna yg lain drp udang, bukan Goong ler jadinye dh kan...Also, bhn2 dlm masakan ni mommy olah sket2 ikut citarasa sndiri. Selamat mencuba....

Bhn: (resipi asal)
16 ekor udang - buang kulit & deveined
bhn perapan:
1sdb gula
2sdt sos soya
1sdt sos tiram
1sdt lada hitam - tumbuk sket
1-2ulas bwg putih - dicincang
-------------
5sdb minyak masak
1/2bj cili merah - hiris pnjg2 - mommy tambah
1/2bj cili hijau - hiris pnjg2 - mommy tambah
daun ketumbar segar
lettuce & bbrp hiris tomato (xder dlm stok masa masak ni)
bbrp hiris timun

Cara:
1. Cmpurkan bhn2 perapan dan gaul mesra dgn udang. Perap dlm tak smpai 5min.
2. Panaskan myk dlm kuali. Goreng udang serta air perapan, smpai udang masak. Angkat dan masukkan ke dalam bekas/mangkuk.
3. Hidangkan bersama sayur2an. Itu aje...

Cucur Labu Kembong


Another series of cucur yihaaaa... :)
This version of cucur sebenarnya tak berapa popular kt rumah ni. Yg makannye cuma mommy and the two li'l boys: Arish & Khalish. Yg lain - reject terus. Whatever!!!...janji I loiiikkeeeee.....
Cucur labu would be my all time fav w/pun tak semua anak menurun mommynye :P

Jom....men-cucur lagi.....!

Anggaran bhn2:
400g labu - mommy guna butternut pumpkin/squash sbb hat tu yg ada kt kedai masa pegi bli  tu.
1 1/2 cwn tepung gandum
1/2 sdt baking soda
1/2cwn gula - anggaran, blh tambah/kurangkan
5-7sdb air - anggaran, ikut kepada kelembutan adunan
-----------
minyak secukupnya utk menggoreng

Cara:
1. Rebus labu hgg lembut. Angkat & toskan airnya. Lenyekkan guna masher. Or, blend it to become a puree. Either one will do.
2. Panaskan minyak dlm pan/pot, api sederhana panas.
3. Dlm satu bekas - gaul rata bhn2 kering. Campurkan labu ke dlm bekas campuran  bhn2 kering then kacau. Masukkan air sedikit demi sedikit shg dapat adunan cucur yg lembut.
4. Kurangkan api kpd medium. Guna sudu sup (atau sudu besar biasa), celupkn skit ke dlm myk panas dan angkat keluar. Then cedok sesudu adunan cucur dan perlahan2 letak dlm myk pnas. Ulang smpai cukup satu pan/pot (spt dlm gambar). Masakkan cucur dgn api medium atau kurang sket. Masak mcm cucur biasa ler kan. Bila dh cam kental angkat dan toskn atas kitchen tissue.

Doughnut versi RB


Who is Richard Bertinet anyway? He's recipes are always be in my top lists in terms of bread making. He's doing it very simple and yet very yummm....RB always making it in manual way  - uli dgn tangan. Bila byk masa, mommy akan buat camtu tp bila xsempat, BM lah dikerah jawabnye....So this one is exactly to make it using the machine.

Jom...men-donut! :D

Bhn:
500g tepung roti
250g susu penuh krim - RB suggests weighing is more accurate dr guna sukatan "ml" dlm bread making
2bj telur saiz A
40g gula kaster
10g garam
60g butter - suhu bilik
15g yis segera

Cara:
1. Masukkan smua bhn ke dlm bread machine. Setkn ke setting dough & tggu hgga proses selesai - 1 1/2jam.
2. Bila dh siap uli, mcm biasa, bwk keluar dan tumbuk2 buang angin. Buat bulat besar & biar dlm 10min (kalau doh agak lembut, jgn risau -- masa nk mmbentuknye nanti alaskn board/bench dgn tepung).
3. Amik doh then bahagikan ikut saiz donut yg dikehendaki. kalau besar2 dpt sket lah kan...Again, buat bulat2. Dah abis buat bulat2 tu then boleh start buat donut - ring type or yg ada inti ikut selera tekak masing2 la ok...Just nk share, utk yg ring type tu, mommy just buat 1 doh macam bola (ikut saiz msg2) then amik penutup botol (kecil) then tekap (tekan smpai ke bwh) ditgh2 doh. Pastu aimk keluar ler hat yg tgh2 tu - jadi lubang le kan? Doh yg kecik2 kt tgh2 tu jgn buang pulak --- just goreng jd donut kecik2 - golek2 atas gula - cucuk 3-4ketul dlm lidi sate.

Self-saucing Chargrill Beef



Kalau hat yg plain chargrilled pnya daging - itu adalah fav my darling sbb bonda mertua sokmo masak camtuh. Makey cicoh nge budu...ambo xleh gi nge budu ni weiii. So..each time bonda mertua wat chargrilled daging, kita pun buat ler air asam sdiri utk cicah hiiiii.....

But this one is my style of chargrilled. I luv it. The kids luv it because it has its own self-saucing. Apa tu self-saucing? Jom tgk resipi & cara2 nak menyediakannya. Don't worry - this one sgt simple. Mommy loike masakan yg simple2 tp perghhh....of course la kan.

Jom kita chargrill......!

Bhn2:
2-3 chunks daging (dlm 300-500g)
1sdb lada hitam - tumbuk kasar2
1sdb olive oil (kalau ada hat yg extra virgin pny lagi ok)

sauce (pencicah):
3-5sdb "air daging"
1sdt serbuk lada hitam
1sdt sos ikan
gula & garam secukup rasa
1sdt tepung jagung + sdkit air (utk memekatkan pencicah nnt)

Cara:
1. Campurkan lada hitam & myk olive dan lumurkan pada daging yg dh dicucuk2 sket dgn garpu. Perap dlm 1jam - the longer the better actually.
2. Pastu panaskan pan (bonda mertua juz guna wok biasa tu je), masakkn daging dgn api medium. Kene tgk2kn sket sbb bila tang daging dah kuarkan airnye (cam byk le gak), tuangkn airnye tu ke dlm satu bekas so daging di-grill kering. So, kalau slps sminit dua ada lagi air, tuangkan keluar dr pan smpai no more airnye tu. Inilah yg mommy panggil "air daging". The grill kn le cam biasa, atas bwh kene masak. Dh siap, angkat.

2. Sos(pencicah) :
Sementara tggu daging tu empuk, ambil "air daging" tadi then masukkan ke dlm satu pot kecil (kalau sikit tmbh lagi air - pencicah, tak perlu byk sgt kan). On kan heat then campurkan lg air, sos ikan, gula & garam. Adjust2 rasanye supaya dpt sweet hot sauce. Bila dh didih, tuangkan tpg jagung + air td, kacau2 smpai ia didih & beku. Tutup api. Siap.

Hidangkan bersama2 dgn nasi dan masakan2 lain.
Hiris daging nipis2 - jgn le plak hidang setongkol lagu tu sbb kita bknnye omputih yg makan lauk aje kan...pastu pencicah tu plak letak dlm bekas kecil.

Cucur Ikan Bilis


I always adore the way my bonda cooks. She's a very simple home chef but in terms of the food...wallah!
I have 10 siblings...bkn sng nak prepare food for all the meals for the day. Yg bestnye tu, kami tak ler byk karenah mcm bdk2 skrg...5 anak, 5 tekak beza2! Kami dulu2, 10 bradik, makan je apa yg mak masak. Dh besar2 sket baru slera lari2 sket :)

Kuih jemput2 a.k.a cucur a.ka cekodok mmg very common masakan  bonda. Bila panas2, cicah ngan samada gula atau sos cili/tomato, abis jugek. Mcm2 jenis cucur bonda buat but one thing for sure, basic ingredientsnye = tepung, air, sdkt garam, telur (kdg2 xletak pun). Ni adalah antara cucur2 yg mommy ingat yg pernah bonda made for us :-
1.cucur ikan bilis - this one my bonda adds ikan bilis yg ditumbuk halus2 (supaya mesra dgn tepung).
2.cucur bwg - just add bwg.
3. cucur kelapa - just add kelapa parut+gula & this one manis so xyah cicah apa2. dh introducekn pd anak2 but they rejected it :(. dh lama xbuat mgkn la ni depa dh tukar slera kots.
4. cucur jagung - some of my kids like it, some not.
5. cucur udang - cam biase le kn ada udang & taugeh - me luv it! but my darl & my kids some hate udang & some hate taugeh in the cucur so kalo masak kena ada part yg kosong aje - jadik cucur kosong la kots eh...!
6. cucur rangup - my very own version of cucur. this one plain cucur, xder telur & air kena lebih sket, so cam cair2 sket adunannya. bila masak dia nipis & rangup seh! kruup-kruup makan :D
7. cucur labu - my all tive fav!!!! just add pumpkin...lama dh xbuat ni, tingin la plak, ahaks!
8. cucur pisang - adussss..mommy tak makan pisang tp still buatkan utk my darl & anak2.
9. cucur pisang kembung - why kembung? just add bicarb. kiut seh...cantik, bulat, licin aje rupanye.
10. cucur durian - aduss again! mommy tak makan durian but all my kids & my darl, luv it!
11. cucur durian kembung - again, just add bicarb.
12. cucur labu kembung - cucur labu yg added with bicarb sket.

...these are all our pure old folks foods yg tak pernah2 lekang dek zaman, kan?

Rasenye ada lg hat yg lain tp almaklum ler...mommy dh masuk umur 4series ni, lupa berbagai...

So this one is the number 1, cucur ikan bilis tp mommy tak letak bicarb. Instead I put instants yeast so that dia akan kembong dgn jayanye gakkan. I take this recipe from Sofinar of MyR. Thanks for sharing!

Bhn:

300g tpg gandum - mommy agak2 dlm 3cwn
1 biji telur - I used A size
1 sudu kecil yis mauripan(= instant yeast)
1/2 cawan ikan bilis - I add a bit more
1 labu bwg besar
2 pokok daun bawang, hiris2 - mommy letak 1 sprig aje sbb kt sini giant pny daun bwg!
1 1/2 cawan air
taugeh jika suka - ignored.
garam secukup rasa - ignored because ikan bilis malaysia dh masin
sedikit serbuk kunyit

Cara-cara:
1. Cuci ikan bilis then kisarkn bersama2 dgn telur, bawang dan air sampai semua hancur.
2. Dalam satu  bekas, gaul tepung dan yis sekejap. Kemudian masukkan semua bahan kisar serta sayur2an (jika ada) dan gaul rata. Perapkan sekejap lebih kurang 30 minit.
3. Panaskan myk masak secukupnya dlm pan/pot. Mommy tak jemput2kn guna tgn as suggested by Sofinar but just guna sudu sup (bulat sket), rendam jap dlm myk panas then kaup sesudu ke dlm fry pan. 

Hidangkan bersama2 dgn sweet sour sauce....

Brekky with Spaghetti Bolognese, Kuih Kasturi & Nasi Goreng Kampung


OMG...I wish I could have more and moreeeeeeeee time in the morning to serve everybody at home....!!!!
But still good for me...what should I call...? Bersilat in the morning in my tiny kitchen is actually a great exercise to me --- despite going to park and jog almost every late afternoon.

My darling is here so almost every late afternoon (if no downpour of course!) he will train all five to play soccer...he's actually a very "garang" trainer hmmm...but good for the kids - they can always improve their soccer skills - me? just LOVE watching soccer on TV but NOT playing soccer...oh come on...I want 1 or 2 more babies - I need to be careful with myself heeeeeeee....

Frankly, I am not a big fan of sphagetti bolognese so for this time of brekky, mommy makan nasi goreng & kuih kasturi aka kuih kacang ajer lah :)...plus kaw2 nescafe :D

The bolognese is a very malaysian style one - a bit hot & spicy (i added blackpepper & chilli powder) and i put more oregano & bay leave...the dice tomato comes with garlic (in a can) and it is much tastier than the plain one.
just can't have enuf time to snap more photos :( except for this malay kuih.

I call it kuih kasturi (because bonda did...) but maybe some of us call it kuih kacang...?!

it's been for ages tak buat kuih ni..skali-skala ok la kan...

Roti Arab - entree for dinner


Okay..as I mentioned yesterday, this is our entree for the dinner. Our dinner x smpat nk snap sbb nak cpt :). This is the full pic of the roti arab yg dah ready at night.

Brekky with Nasi Himpit, Roti Arab with Chicken Curry & Chips

Roti arab is a very simple bread to make in the early morning except that u have to wait for about 1hr for the dough to rise. Kneading pun tak lama. Doh rise dgn jayanye so Alhamdulillah dpt masak dgn kembongnyer.
I just used half portion of the dough. The other half I kept in the fridge and buat as entree for the dinner :)

...the curry utk cicah roti arab - ada wings aje so I added diced potato as well
Also nasi himpit. Actually kacang tanah ada ler tak smapi secawan so just blend halus sket. Cukup ler kuah kacang utk brekky --- nak alas perut je kan hehhe..

Brekky with Mini Kuih Lapis, Meehun Goreng & Grilled Chicken Sandwich

Kuih lapis semestinya fav si kecik 2 org tuh. Depa yg selalu pilih2 kaler tp pagi ni mommy tak smpt nk consult depa kaler per so taram je la labuuuu.....Mommy buat mini kuih lapis, kukus dlm ramekin...la ni dh terbekenan dgn cara tu sbb sng nk bagi2kn dlm lunchboxes :D

All these brekky last 2 weeks punya daa....at random aje post kt sini, ikut mana sempat je la nmpk gayernye :P

Mee Rebus ala MZ


All of sudden anak tekak ni teringin la pulak makan mee rebus MZ - Mat Zain (yg fofuler kt kg my darling). Very simple one tp mgkn sbb sos cili & tomatonye dibuat khas utk masakan tu. Mmg ada dijual kt kedai tu (their homemade sauces).
Sbbnya mommy tgk cara depa masak - sempoi sgt2...xbyk bhn guna cuma dok tuang2 sos tu ler.
Mommy dh byk kali try tp belum 100% sampai tahap rasa macam mee rebus MZ tu :(. Even dh try rebuskan udang and masak kuah dgn ari rebusan udang but still tak sama!
My strong instinct: the sauces are different!
Bila ada chance nnt, InsyaAllah bila balik Msia & blk kg my darling nnt nk beli sos2 tu...

Jom try buat mee rebus ala MZ.........

Bhn:
300g mee kuning - cuci & celur (dpt dlm 4mangkuk saiz sederhana)

Kuah:
4ulas bwg putih - ketuk
3/4cwn isi ayam (plus bhg tulang2 sket) - isi ayam potong dadu[kt kedai MZ, kalau nk udang/sotong - not in stock right now - these two comes with special price kt kedai MZ tu & udangnya gedabak2]
3cwn air atau secukupnya
1/2botol sos cili (botol kecik yer...mmg kene byk sbb no cili kisar added)
3-4sdb sos tomato (adjust this one)
garam & gula secukup rasa
3bj telur
----
sayur kangkung secukupnya, potong pendek2 (mesti ada - signature mee MZ)
myk utk menumis
cili merah hiris nipis2 (optional)
hirisan limau nipis (optional)

Cara:
1. Panaskan myk dlm kuali. Tumiskan bwg putih. Bila dh naik bau, gorengkan ayam (atau udang) smpai airnya kering - kena kacau2 lah). Then baru masukkan sos2, kacau2. Followed by air then perisakan dgn garam & gula.
2. Bila dh mendidih dlm 1min (hampir nk masak), baru pecahkn telur. Biarkn telur tu masak skjp (biar yolk lembut2 gitu). Tutup api then taburkan sayur kangkung dlm kuali tu (sayur kangkung xperlu masak lama sbb kuali masih panas & dia leh masak lg). Biar skjp then hidangkan sbg kuah mee kuning. Taburkan hirisan cili merah kalau suka plus hirisan limau nipis - dua2 tak bubuh sbb makan gitu aje dh sedap :)
--- rasenye mcm plain but pedas2 msm manis sket...

Brekky with Meehun Goreng (again...), Kuih Kundas & Homemade Chicken Kebabs

Atas permintaan, today kenelah menggoreng meehun lagi (hari sebelumnye x cukup rasenye...mmm...). So, xperlu ulang tayang gambo meehun cumanya hari ni lengkap dgn choi sum & taugeh & proteinnye daging (hari sblmnye ayam).

Kuih-muih...? Hari ni sempoi aje --- just masak kuih kundas.  Pastu buat kebab. Simple sehh...

Alhamdulillah....kenyang & cukup utk bekal ke uni-sekolah-child care ^_______^.

Buat kebab sgt senang...this one is favourite my anak2 & my darling. Mommy? tak ler brp suker sgt. hat yg ni pun mommy tak jamah langsung. ntah laa..kebab ni dh mcm xleh nak terima dek anak tekak dah. since ada pilihan lain, mommy makan ler hat yg lain tuu...kalo xder, kene ler ngap gaks :P

Ni nk share very simple way nk prepare kebabs (meat blh samada daging ayam atau lembu, ikut selera, ok?)

Homemade Chicken Kebabs
Bhn & Cara:
Wraps secukupnya (beli ready-made)

Inti:
grilled chicken - perap jap ngan olive oil, pepper (tmbuk kasar2) & sdkit garam then grill la
salad2- pilihan tekak msg2 like lettuce/large red onion[slices]/tabbouleh[kene ada burghul]
grated cheddar cheese
garlic sauce - mayo+sdkt garlic paste/powder+sdkit tomato sos - gaul rata
bbq sauce

i.Potong alumunium foil lebih besar sket dr saiz wrap
ii.Letak wrap di atas foil.
iii.Letak inti: ayam then salads then sauce
iv.Gulung wrap kemas2.
v. Lipat both sides ke dalam (spt dlm gambar bwh).
vi. Akhir sekali gulung kemas kebab dgn foil.
vii. Cut in half agar sng nak makan. Bhg tepi yg dilipat ke dlm tu kirenye bhg bwh so that masa makan tak meleleh sos2 tu turun kan....

...cuti dh abes daaa..kalau tak mau melepek kt rmh dgn cuaca cam ni :D

Trip to Blue Mountains

Long weekend holidays ni ada plak yg mengajak pi Blue Mountains. Mula2 xder plan pe tapi ada yg ndak pegi so, join aje ler.
School holidays dah start last Friday. last Friday gak cuti Good Friday so we all pi ler ke Blue Mountains. Today (Monday) & tomorrow pun cuti Easter.
So these photos xder resipi or gambo makanan pe2...eh wait! ada kot sket2 sbb kami bwk food bekal utk sari suntuk ke gunung biru tuh. Mommy cuma masak mee goreng, tuna sandwich (brekky) & for lunch: nasi putih, daging masak kicap, ayam goreng kunyit & wombok tumis lada hitam.

We started our journey at about 6:45am (plan 6am...ngeh3....). Convoy 4 kete, smuanya family blaka except sorang brother cum photographer :). Gambo2 ni dia yg shoot plus sesapa yg ada kt ctu kitrg mintak tlg shoot kn. So, ni ler dia antara ratusan gambar2 we all di Blue Mountains, Australia.

Apam Madu


Pada suatu pagi yg mcm biasa, kelam-kabut dgn siren (mulut daaa) tak henti2 (sbb bdk2 xbgn2, subuh dh pnjg!) --- maka timbul lah idea nk buat apam simple. Anak2 suka sgt ngan apam tanpa kelapa neh so mmg bertambah mudah ler hidup mommy ngeh3....

Dgn resminya, dptlah idea buat apam madu yg terrrrr-amat simple dan cpt masak. Resipi ni mommy olah dr resipi apam coklat bonda mommy. Less than 30min, beresssss....yeahhh...

Jommmm meng-apam....!

Bhn:
1cwn tepung gandum
1/2sdt soda bikarbonat (bkg soda)
1/2cwn minyak masak
1/2cwn fresh milk
1/2cwn gula
1/8cwn madu
1bj telur
-------------
parutan kelapa digaulkan dgn sedikit garam (optional)

Cara:
1. Panaskan kukusan. Sediakan acuan apam (cuma 1 kali masak (2 tgkt kukusan skaligus) dah setel )
2. Letak semua bhn2 dlm satu bekas besar. Whisk smpai lembut (xder lumps). Adunan siap.
3. Letak dlm acuan apam then kukus dlm tak sampai 15min. Siap & boleh diangkat & makan :)

Cadangan: boleh dimakan dgn parutan kelapa + garam....nyummmmmmm.........(tiada dlm gmbr yerrr).

Brekky with Kuih Sagu, Ondeh2, Chicken Puff dan Nasi Goreng


puff inti ayam di-saute dgn olive oil & marinade jap ngan blackpepper+garlic+salt

Semua2 ni merangkap brekky & lunchboxes utk 7 beranak.
2 ke uni - 1 ke high school - 3 ke public school - 1 ke child care, phew!
and....smua gambo2 ni smua tangkap muat aje dlm kamera... pepagi mmanjangnye ribut ributannnn.

Kuih sagu & chic puff plus nasi goreng, mommy yg uruskan. Ops...! Nasi goreng xsempat nk bergambo la plak. Lebih nasi dinner mlm td. Beras basmathi so sayang nk tggl2kn camtuh so goreng aje. Tekak mommy cannot GO ngan nasi goreng beras basmathi..xtau ler naper jakun sgt. So, my darling & anak2 je mkn. Me just telan the kuih2 aje.

Kuih ondeh2 aka buah melaka tu Batrisyia yg uli, hiris palm sugar & buat bebola. Rumaysa (tukang rebus, angkat, golek2 atas kelapa). --- sebenarnye berebut nk merebus dgn Danish sbb depa suke sgt tggu buah melaka tu floating bila dh masak...mcm main mancing ikan daaa....
Ni sukatan Batrisyia buat utk buah melaka (sbb mommy tak pernah2 menyukat....):
Bhn2:
1cwn tepung pulut
1/8cwn tpg gandum
1/8cwn santan pekat
70 - 75ml air
sedikit garam
pandan paste secukupnya
-----
hirisan2 palm sugar/manisan/gula melaka
parutan kelapa/shredded/dessicated plus sedikit garam (letak dlm satu piring atau mangkuk)

Cara:
1. Panaskn air dlm satu periuk saiz medium, air dlm lebih sket 1/2 periuk.
2. Dlm satu bekas, gaul rata tpg2 dn garam. Tuang pandan paste serta santan then air sket2 sambil uli2. Mula2 dgn jari lama dgn tangan utk dptkan adunan sekata.
3. Then cam biasa, sudukn (sd teh) adunan (supaya saiz lbh krg sama beso), golek2kan atas tapak tgn utk jd bebola - leperkan then taruk ler hirisan palm sugar secukupnye - then katup kemas. Rebus smpai ondeh2 timbul then golek2kn atas parutan kelapa. Buat smpai abis. Siap!

Brekky with Karipap Sardin & Cik Mek Molek


Karipap mmg regular kuih kt dapur mommy. Anak2 lom jemu..sama ler ngan mak pak nye hhehhehe.
Cik mek pon sama. Lebihan ubi buat kuih gelang aritu so dptler dlm 4-5 ketul aje. Alhamdulillah..Ni brekky last Sunday yer, definitely not today ahaks!

Nasi Pelangi & the gang



ttgl lak ikan masak merah - namanye ikan jacket tp bkn ikan cencaru, makan aje laaa :)

Dah lama dh rasenye tak buat rainbow rice (gelaran by my kids). Rainbow rice ni suku sakat nasi myk yg di-enhance-kn...what a great fusion, kan? rase ttp mengancam; moreover the colour laks smakin cun.
Cadangnye nk ler buat nasi apollo tp malas la plak nk stim menye-tim so sudahnye, timbul ler pelangi ngeh3....
